On steak, you need to grill it --> period. Pan frying (finishing in the oven, and so forth) is a completely inferior way to cook steak.
Olive oil has a "grassy" flavor -- canola is a neutral oil. The burn points are different, but the reason to use one and not the other -- most of the time -- is that "grassy" taste, where canola doesn't taste like much of anything.
